Blood orange, kale and Pecorino salad

It’s been a long week here. And boy do I mean a really long week. It’s never felt so good to hit the sofa with a (huge) glass of white wine and Chris by my side. This week has been full of anxiety and stress, deliriousness and sleep deprivation. But it’s almost been full of the greatest laughs and time spent with some of the best people I know. It’s the only way to get through a long few weeks that’s been fuelled by nothing but take-aways. And that’s where this little salad comes in. It’s a total way to reset your batteries and reset your body. God I even feel healthy just looking at it.

All we do is take a few good ingredients, chuck them in a bowl and mix them all up in a gorgeous orange citrus dressing. Easy, healthy and totally tasty. So say hello to this blood orange, kale and Pecorino salad.

Take a big ol’ fresh bunch of kale. Pick your favourite type, or if you’re a kale hater grab some spinach instead, and chop it into thick strips. Next peel three blood oranges and cut into thick slices. Place them all in a bowl. Sprinkle over a big handful of pistachio nuts and pomegranate seeds.

Our dressing is so simple. Blood orange juice, extra virgin olive oil, a touch of Dijon mustard and white wine vinegar, topped off with salt and pepper. We give the kale a good massage to make sure all the citrus flavour gets absorbed and starts to break down our kale. If the thought of a raw kale salad is too daunting, try using spinach or quickly blanching the kale beforehand.

Ingredients (serves 2)

Salad
Big bunch of kale

Three blood oranges, peeled and sliced

Handful of pomegranate seeds

Handful of pistachio nuts, roughly chopped

Handful of pecorino shavings

Dressing

Juice of one blood orange

3 tablespoons of extra virgin olive oil

1 tablespoon of white wine vinegar

1 teaspoon of Dijon mustard

Salt and pepper to taste

Steps

1. Wash kale and pat dry. Put on ‘Rather be’ by Clean Bandits, mandatory. In fact take 5 and watch the damn video.

2. Place all the dressing ingredients in a bowl and whisk till emulsified. Place the kale strips in a large bowl and tip over most of the dressing. Massage well into the kale leaves. Seriously, get those hands in there.

3. Tip in the rest of the salad ingredients and dressing and mix well. Serve.
